Her schooling includes the California Culinary Academy, La Varenne (in Paris), Oriental Cooking School in Bangkok, New Orleans School of Cooking, The Sante Fe School of Cooking, and an apprenticeship at Roger Vergeʼs three star restaurant in Mougins, France.
Joanʼs extensive world travels influence her menus; her research into local and ethnic foods has taken her to South America, Mexico, Hong Kong, Thailand, France, Italy, as well as New Orleans, New England and the Southwest closer to home. Her magic is to blend those flavors into a cuisine that is uniquely her own.
